Cognate with Ancient Greek φρύγω (phrúgō, “to roast, bake”), Sanskrit भृज्जति (bhṛjjati, “to roast, grill, fry”). Replaced native Middle English hirsten, from Old English hierstan (“to fry”). Related to bhurji, bhujia (“fried Indian snacks”).
